In the past year I’ve dabbled fondly with fresh herbs. I felt like it was the first time in my young adult life that I had money to spare for such ingredients. As a student, all my herbs came in pots and jars which I used sparingly to flavour my meals in order to save money, and the idea of buying a fresh bunch of basil or coriander was simply out of the question.
I’ve particularly become fond of thyme. And rosemary actually. But today I’m just going to talk about thyme. Thyme is a rather beautiful and delicate looking herb, despite it being very hardy. Punchy and aromatic in flavour, it’s a powerful herb most associated with stuffings for the Sunday roast, or hearty stews. I wanted to create a dish that was lighter, and really showcased the flavour of thyme.
I decided to make a pizza to complement the floral taste of the thyme. Sweetness from butternut squash, acidity from shallots, creaminess from the goat cheese. Adorned with the elegant stalks of thyme. Enjoy for a Saturday dinner or a Sunday lunch with a difference.
