The weather is ridiculously icy outside. I know January is supposed to be a time for healthier eating, new beginnings, cleansing the body… but I just can’t muster up the motivation. My diet is in no way poor, I eat plenty of vegetables and fruit, and I don’t eat anything in excess. I just want my meals to be warming, and soothing, and comforting as I sit in the kitchen on frosty evenings. I want my dinners to be hot and rich and filling.
In the fridge this week were some left over cavolo nero leaves, almost past their best. And what is the best way to salvage almost-bin-worthy vegetables? Cover them in delicious sauce of course. Cheese, mustard, garlic; surely three of the most simple but heavenly ingredients to grace ones’ plate. All baked up with the cavolo nero, broccoli and caulifower to create a delightfully savory supper, this dish is certainly a ‘winter warmer.’
