Ingredients
- 1 large courgette
- 2 large cloves of garlic
- 1 whole chilli
- 12 sun dried tomatoes
- 200 grams dried spaghetti
- olive oil
- Parmesan
- Salt
- Pepper
Instructions
- Place your spaghetti into a pan of salted boiling water and simmer until al dente (aroung 7-8 mins)
- As your pasta is cooking, heat a tablespoon of olive oil in a frying pan on a low-medium heat, whilst also chopping up your chilli until fine, along with the sun dried tomatoes, courgette and garlic
- Throw the courgette into the pan and cook through for around three minutes
- Add all of the other ingredients, and season well with salt and pepper. At this point you can also add in a small splash of balsamic vinegar.
- Cook off the ingredients for around 7 minutes, allowing the flavours to mingle
- Drain your pasta once cooked, but reserve around 2 tablespoons of cooking water. Throw both the pasta and cooking water into the frying pan with the other ingredients and toss together
- Serve up into bowls and grate over parmesan
