Ingredients
- 110 grams butter
- 110 grams self-raising flour
- 2 large eggs
- 1 teaspoon baking powder
- 1 tablespoon instant coffee, diluted in 1 teaspoon warm water
- 50 grams pecans, chopped
- 20 grams dates, chopped
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 180 degrees
- In a mixing bowl, cream together your butter and sugar. Then add in the eggs one at a time, mixing in between
- In a separate bowl, mix the flour, baking powder and cinnamon
- Add the dry ingredients into the wet ingredients gradually whilst folding gently
- Once the mixture is well combined, fold in your chopped dates and pecans
- Line a baking tray with baking parchment, and then grease with
- butter
- Pour your cake batter into the tray making sure it is more or less level all over
- Bake in the oven on the middle shelf for 25 minutes or until golden
- Once your cake is done, and cooled, you can top it with whatever you like. Simple sprinkle with icing sugar or cinnamon (or both!) or why not make a coffee icing or buttercream?
