The Quesadilla – a joyful hand-held meal that bears all that we consider comforting. Carby, gooey and steaming fillings packed in to crisp toasted tortilla. Every bite starts first with a crunch before the soft and soothing filling is reached. Perhaps cheese melts out of the sides, and coriander leaves give an uplifting refresh.
Quesadillas are very versatile if you want to steer away from the traditional type. Choose your favorite fillings, fry up some tortilla wraps and you’re pretty much all set. This recipe focuses on three main ingredients – sweet potato, feta and red onion. This combination provides you with a carbohydrate hit whilst still being a balanced meal. The sweet, soft potato, sharp red onion and salty feta are then complimented with hints of smoked paprika.
